Sugar free Toddler Pancakes


I developed this recipe because my little one had to have the BRAT diet for a while to cure a case of diarrhea. I needed to get creative with what I could give him so I came up with these beauties. No sugar added at all, just some applesauce and bananas for sweetness. Serve the pancakes as is or with a touch of honey (if your baby is above the age of 1), maple syrup or Nutella.

Pancakes:

1 cup unbleached flour

1 tablespoon baking powder

1 cup unsweetened applesauce

1 ripe banana cup into small slices

1 egg

1 teaspoon f cinnamon (optional)

1 cup of whole organic milk

2 tblsps melted butter

Mix all ingredients in a medium size bowl. Mix well into you have a smooth batter.

Ladle a approx. 1/4 cup into a hot pan (that has been brushed with melted butter). On medium heat cook pancake until top is bubbling and then flip over for about a minute or so. Serve warm with or without syrup.
